Peach Mint Lemonade

Pureed peach swirled in a sweet and tangy mint lemonade. This peach mint lemonade is a delicious and refreshing drink, perfect for hot summer days.

What I love most about CSA boxes is that you get fresh local ingredients directly from the farmers. Based on what you receive from each delivery, you can be as creative as you like with your dishes.

The August CSA subscription is filled with peaches, strawberries, melons, leaf lettuce, beefsteak tomatoes, bell peppers, corn, and so much more.

Peach Mint Lemonade 2

For today, I wanted to share with you an amazingly simple yet refreshing peach mint lemonade.

I am so utterly obsessed with peaches during the summer. Honestly, any stone fruit or berries. There’s something about these fruits that I can’t seem to get enough of.

So of course, when I have them on hand, I love to use them as ingredients.

I love the sweet and tanginess of the lemonade and the refreshing taste of mint. Now, add pureed peach and strawberries and you have a lemonade that’s absolutely perfect for hot summer days.

Peach Mint Lemonade 3

In a glass jar, mix together freshly squeezed lemon juice, water, mint leaves, and a little bit of granulated sugar until combined. If you want, you can switch out the granulated sugar for your choice of sweetener.

Puree a yellow peach in the blender until smooth to your liking. I also like to add 1-2 large strawberries for a little bit more color and sweetness. But that’s completely optional.

Pour the peach puree into the mint lemonade, and stir until combined.

Add crushed ice to cool the drink.

Serve the peach mint lemonade cold.

Ingredients:

  • 1 cup hot water
  • 8-9 large mint leaves
  • ¼ cup lemon juice
  • 2 teaspoons granulated sugar, or choice of sweetener
  • 1 large peach
  • 2 strawberries
  • Crushed ice for topping
  • Mint for garnish

In a glass jar, mix together freshly squeezed lemon juice, water, mint leaves, and a little bit of granulated sugar until combined.

Puree a yellow peach in the blender until smooth to your liking. Add 1-2 large strawberries for a little bit more color and sweetness if desired.

Pour the peach puree into the mint lemonade, and stir until combined.

Add crushed ice to cool the drink. Garnish with mint.

Serve the peach mint lemonade cold.
